Stores
A store is a place where stock lies. You reach the list through the Settings navigation entry and the Stores button.
A product holds its stock per store, that is one row for every store created. Why there is more than one and how the rows add up to the stock in the shop is described under stock.
Overview / list
A new client comes with one store, called Standardlager. It can be renamed like any other.
Five buttons sit above the list. New creates a store, Edit opens the selected one, Delete removes it after a confirmation. Move Up and Move Down move the selected row by one position. They are grayed out where there is nowhere to go in that direction, in the image Move Up on the first row.
The list shows two columns:

Sorting follows Position, and that order is not cosmetic: the stock rows on the product appear in the same order, and the store at position 1 is the one whose row a new product gets first.
The stock goes with the store. Deleting removes every stock row of that store on every product, without a further confirmation and without a way back. A store that is no longer supplied is therefore better set to stock 0 than deleted.
